By partnering with just two national suppliers for all our produce, we reduce our carbon footprint and support local businesses. We have meticulously researched and selected these suppliers based on the high standards they maintain in sourcing dairy, meat, and vegetables—the very ingredients that form the heart of our dishes.

Our menu is handmade on in our kitchen by our team of Cooks, led by Jason Bradshaw who has more than 20 years’ experience in the hospitality and catering business.
Our location allows us to use just 2 national suppliers for all our produce which keeps our carbon footprint to a minimum.
Brakes; wanting to emphasise the quality products that Scottish producers could offer set up Brakes Scotland in 2016. This opened up a locally sourced range to us that includes produce from some of the highest quality and most respected companies based within Scotland:
McLays Foods; were formed 25 years ago as a specialist catering butcher and is highly regarded as Scotland’s premier chilled food supplier. Their beef is sourced from Ayrshire by their dedicated buying teams for maximum favour and tenderness. We only use chicken breasts for our sandwiches which come from the best Glasgow farms. Although the Scottish climate doesn’t allow for a year round supply of vegetables, carrots are available from the fertile Fife soil all year round
• Grahams Family Dairy have been milking cows in Bridge of Allan, in the shadow of Wallace’s monument since the 1930’s. They’ve grown to be Scotland’s largest independent dairy and have won numerous accolades at Scotland’s Food and Drink Excellence awards. This gives us confidence that our milk, butter and yoghurt are of the highest standards and that is reflected especially in our handmade cakes!
• Our sandwiches, baked potatoes and main meals are enhanced by using one of Scotland’s best known cheddar cheeses which comes from the Lockerbie creamery. We accept that Lockerbie is very close to England however the rolling lush countryside certainly offers the ideal pastures required to produce such a rich, full favour.
• We only buy free range hens eggs that carry the Lion safety stamp. This ensures that the bird’s welfare is well managed and that the eggs are all individually dated which means they’ll always be fresh when we crack them open. Farmlay have been farming since
1936 and are located near Fraserburgh in the heart of Aberdeenshire where they boast some of the highest hours of sunshine in Scotland!
